Slice raw Eggplant in circles (1/2” thick)
Coat both sides of Eggplant slices in Egg (3 Eggs should be enough for an entire Eggplant)
Italian Bread Crumbs (1 cup), All-Purpose Flour (1 cup), 1 Teaspoon of Salt, 3 Shakes of Black Pepper
Coat both sides of the Eggplant and fry in Vegetable Oil
…until golden brown
Pre-heat oven to 375 degrees (F).
Use favorite jar sauce OR scratch sauce (time permitting, that takes hours) :)
Cover entirely with shredded Mozzarella cheese.
Bake for 35-45 minutes (depending on how crispy you want the top cheese layer)
Serve with Spaghetti
